Very ignorant on carb adjustment....

You mean the needle that is attached to the slide that is attached to the cable?
Compress the spring till you get enough slack in the cable to unhook it from the slide.
Be prepared to go look for the spring after it goes flying across the garage.
There is a large clip in the top of the slide that holds the needle in.
The needle has a small clip and 5 grooves to select from which determines the fuel mixture mid range. The lower the clip, the richer the mixture..should probably be set in the middle groove to start.

Because of the way these carbs work, you can have a problem that presents itself at speed even though it idles fine. This is due to the different route the fuel takes depending on throttle position. If it's idling fine, messing with the air screw and slide screw won't address the problem you're describing which seems to be at intermediate to full throttle...? You've described an engine running rich, the first step might be to lower the jet needle one notch and see if that helps. You also might check the main jet again to make sure it's the stock size.
