Can Of Worms Alert: Which are the 'correct' cables?

I have a '65 Superhawk that's nowhere near being on the road, but I'm doing all I can to be sure I have what I'll need as I begin the resto in earnest. One of the things I bought was a new flat bar and all related cables from Tim McDowell.
Now, I love the look of a flat bar, but I reckon a 'low rise' bar (see pic) is probably going to be much more comfortable for me. I've got a line on one and want to go ahead a buy it but i know the cables I have will be too short.
Does anyone know for certain which cables will fit/be correct for these bars and if so where I might get them?

That is the higher of the two US riser handlebars (yes, Type II riser), Canadian market notwithstanding; the Canadian model was available with a handlebar much like the US-market's CA models.
