what size the fork by mm if the fork ears are taken off

Yes, my cafe' with clip-ons has 32mm legs where the clip-ons mount. There are sellers on Ebay that have them, here's a few links. Just type in 32mm clip-ons.

One thing about removing the fork ears/fork covers is that the fork tubes aren't polished underneath, and you're going to see all the machine marks on those fork tubes. Don't know if that matters to you or not, but it might be a bit unattractive...just something else to consider. And at least on my bike, they do taper!
